Ingredients

Scale
  • 1 sheet puff pastry (about 9x14 inches), thawed but still cold
  • 4 ounces brie cheese, rind on, cut into 24 small cubes (about ½ inch each)
  • ½ cup fresh cranberries, roughly chopped
  • 3 tablespoons honey, divided
  • ½ teaspoon red pepper flakes (more or less to taste)
  • 1 teaspoon apple cider vinegar
  • 1 large egg, beaten with 1 tablespoon water (for egg wash)
  • 1 teaspoon fresh thyme leaves, plus extra for garnish
  • ¼ teaspoon flaky sea salt (such as Maldon)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. If using a mini muffin tin, lightly grease it or line with mini parchment liners.
  2. Make the hot honey: In a small saucepan over medium heat, combine 2 tablespoons honey, ½ teaspoon red pepper flakes, and 1 teaspoon apple cider vinegar. Stir gently and let simmer for 1-2 minutes until slightly thickened and fragrant. Remove from heat and set aside.
  3. Prepare the pastry: On a lightly floured surface, unfold the thawed puff pastry sheet. Using a sharp knife or pizza cutter, cut into 24 equal squares (about 1.5 inches each). If sticky, refrigerate for 5 minutes.
  4. Shape the cups: Gently press each square into the cups of a mini muffin tin, or place on the parchment-lined baking sheet about 2 inches apart. If not using a muffin tin, gently fold the edges of each square up to create a small rim.
  5. Add the filling: Place one cube of brie into the center of each pastry square. Top with a small spoonful of chopped cranberries (about 4-5 pieces per cup).
  6. Egg wash and bake: Brush the edges of each pastry cup with the beaten egg wash. Bake for 12-15 minutes, until the pastry is puffed and golden brown and the brie is melted and bubbly.
  7. Finish with hot honey: Remove from oven and let cool in the pan for 2-3 minutes. Using a pastry brush or small spoon, drizzle the warm hot honey over each bite. Sprinkle with fresh thyme leaves and a pinch of flaky sea salt.
  8. Serve warm: Best enjoyed within 15-20 minutes of coming out of the oven.

Notes

Keep puff pastry cold for best results. Chop cranberries finely to ensure even cooking. Watch hot honey carefully to prevent burning. For best texture, serve immediately after baking. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days and reheated in a 350°F oven for 5-7 minutes.
