A quick and easy fall dessert dip featuring a silky cream cheese layer, rich homemade caramel, and crunchy toffee bits. Perfect for apple slices, graham crackers, and more.

  • 16 oz cream cheese, softened to room temperature
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup unsalted butter
  • 1 cup packed light brown sugar
  • 1/4 cup heavy cream
  • 1/4 teaspoon sea salt
  • 1/2 cup toffee bits
  • 34 medium apples, sliced for serving
  • Optional: graham crackers, vanilla wafers, pretzels, or shortbread cookies for serving

Instructions

  1. Soften the cream cheese by letting it sit at room temperature for about 30 minutes.
  2. In a medium bowl, beat the softened cream cheese with an electric hand mixer on medium speed until smooth, about 2 minutes. Scrape down the sides.
  3. Add granulated sugar and vanilla extract, beat for another 2 minutes until light and fluffy.
  4. Spread the cream cheese mixture evenly in an 8×8 inch serving dish or pie plate. Refrigerate while making the caramel.
  5. In a heavy-bottomed saucepan, melt the unsalted butter over medium-low heat.
  6. Add the packed light brown sugar and stir constantly until fully incorporated, about 2 minutes.
  7. Increase heat to medium and bring to a gentle boil. Let boil for 2 minutes without stirring.
  8. Remove from heat and slowly pour in the heavy cream while whisking constantly.
  9. Whisk in the sea salt until smooth. Let cool for about 5 minutes.
  10. Remove the cream cheese layer from the refrigerator. Slowly pour the warm caramel over the top and spread gently to cover.
  11. Sprinkle toffee bits evenly over the caramel layer, pressing gently to stick.
  12. Refrigerate for at least 30 minutes before serving.
  13. Right before serving, slice apples into wedges. Arrange dip with apple slices and optional dippers.

Notes

For best results, use full-fat cream cheese and a heavy-bottomed saucepan for the caramel. Do not stir the caramel once it starts boiling to prevent graininess. The dip can be made up to 24 hours ahead; add toffee bits just before serving. Serve chilled or at room temperature.
