  • 1 tablespoon butter (unsalted, to mellow the heat and add richness)
  • 1/2 teaspoon garlic powder (not garlic salt—we don’t need extra sodium)
  • 1/4 teaspoon onion powder (adds subtle depth without overpowering)
  • Salt and black pepper to taste (go easy on salt since hot sauce and ranch already have plenty)
  • Crispy tortilla chips for serving (restaurant-style or thick-cut hold up best; I love Juanita’s or Tostitos Scoops)

Instructions

  1. Prep the chicken. If using rotisserie chicken, remove the skin and shred the meat with two forks. You want small, bite-sized pieces—not huge chunks. If cooking your own, place 2 boneless skinless chicken breasts in a pot, cover with salted water, bring to a boil, then reduce to a simmer for 12-15 minutes until cooked through. Let cool slightly, then shred. You should end up with about 2 cups of shredded chicken.
  2. Soften the cream cheese. Take the cream cheese out of the fridge about 30 minutes before starting, or microwave it in 15-second bursts until soft but not melted. This is crucial—cold cream cheese won’t blend smoothly and you’ll end up with little white lumps in your dip.
  3. Combine the base. In a medium saucepan over low heat, add the softened cream cheese, ranch dressing, buffalo hot sauce, butter, garlic powder, and onion powder. Stir continuously with a rubber spatula until everything is melted, smooth, and well combined. This takes about 3-4 minutes. Don’t crank up the heat—low and slow prevents the dairy from separating.
  4. Add the chicken. Fold in the shredded chicken until every piece is coated in that creamy, spicy sauce. Let it cook for another 2-3 minutes, stirring occasionally, so the chicken absorbs some of that flavor. You’ll notice the dip starting to thicken slightly—that’s exactly what you want.
  5. Add the cheese. Remove the pan from heat and stir in the shredded cheddar cheese and crumbled blue cheese (if using). The residual heat will melt the cheese without making it greasy. Stir until smooth and fully incorporated. Taste and adjust salt and pepper—remember, the hot sauce and ranch already bring plenty of salt, so go easy.
  6. Bake (optional but recommended). Transfer the dip to an oven-safe baking dish. Bake at 375°F (190°C) for 15-20 minutes until bubbly and golden on top. This step isn’t strictly necessary, but it gives the dip a beautiful browned top and helps the flavors meld together even more. If you’re in a hurry, you can skip the oven and serve it straight from the stovetop.
  7. Serve. Let the dip cool for 5 minutes before serving—it’ll be molten hot straight out of the oven. Arrange your crispy tortilla chips around the bowl and dig in while it’s warm. The dip will thicken slightly as it cools, which makes it even better for scooping.

Notes

For the chicken, rotisserie chicken saves time and adds extra flavor. Use block cream cheese, not the tub version, to avoid a grainy texture. Low heat is essential to prevent the dairy from separating. The dip can be made ahead and tastes even better the next day. For parties, keep it warm in a slow cooker on the warm setting.
