This cranberry baked brie appetizer board is warm, gooey, tart, sweet, and crunchy all at once. It’s a showstopper that requires almost no effort, perfect for holiday parties, game days, or cozy nights in.

  • 1 (8-ounce) wheel of brie cheese (room temperature)
  • 1/2 cup cranberry sauce (homemade or canned whole berry)
  • 1/4 cup chopped pecans or walnuts (lightly toasted)
  • 1 tablespoon honey or maple syrup
  • 12 sprigs fresh rosemary or thyme (for garnish)
  • 1 bag crackers (water crackers or buttery Ritz-style)
  • 1 baguette, sliced and toasted
  • 1 cup fresh or dried fruit (sliced apples, pears, dried apricots, or figs)
  • 1/2 cup nuts (almonds, cashews, or more pecans)
  • Optional: Slices of prosciutto or salami

Instructions

  1. Preheat your oven to 350°F (175°C). Let the brie sit at room temperature for 15-20 minutes.
  2. Using a sharp knife, carefully slice off the top rind of the brie wheel, leaving the sides and bottom intact.
  3. Place the brie in a small baking dish or cast iron skillet (optionally lined with parchment paper).
  4. Spoon the cranberry sauce evenly over the top of the brie.
  5. Sprinkle the chopped pecans or walnuts over the cranberry sauce, then drizzle with honey or maple syrup.
  6. Bake for 15-20 minutes, until the cheese is soft and puffy in the center and the cranberry sauce is bubbling at the edges.
  7. While the brie bakes, arrange crackers, toasted baguette slices, fresh fruit, and additional nuts or meats on a serving board, leaving space in the center.
  8. Remove the brie from the oven and let it cool for 2-3 minutes. Carefully transfer the baking dish to the center of the prepared board.
  9. Garnish with fresh rosemary or thyme sprigs. Serve immediately while warm and gooey.

Notes

For best results, use room-temperature brie to ensure even melting. If the brie leaks a little white liquid (whey) while baking, blot it gently with a paper towel before serving. Overbaking can cause the cheese to become grainy, so watch the oven time carefully.
