  • 1 large egg, beaten
  • 1 teaspoon activated charcoal powder
  • 1 tablespoon water
  • Flaky sea salt (e.g., Maldon)
  • 1 tablespoon everything bagel seasoning (optional)
  • 8 ounces aged cheddar (e.g., Kerrygold)
  • 6 ounces brie or camembert
  • 4 ounces goat cheese log
  • 4 ounces prosciutto
  • 4 ounces salami (e.g., soppressata)
  • 1/2 cup black olives (kalamata or castelvetrano)
  • 1/2 cup dried black mission figs
  • 1/4 cup blackberry jam or fig jam
  • Fresh rosemary sprigs (for garnish)

Instructions

  1. Make the Black Egg Wash: In a small bowl, whisk together the beaten egg, activated charcoal powder, and water until completely smooth. It should look like liquid black ink. If too thick, add another drop of water; if too thin, add a pinch more charcoal. Set aside.
  2. Prepare the Puff Pastry: On a lightly floured surface, gently roll out the thawed puff pastry sheet to about 1/8-inch thickness. Do not overwork the dough.
  3. Cut the Crackers: Using a pizza cutter or sharp knife, cut the pastry into rectangles, squares, or triangles about 2×3 inches. You should get about 20-24 crackers.
  4. First Bake (The Base): Transfer the cut pastry pieces to a parchment-lined baking sheet, leaving about an inch of space between each. Prick each cracker a few times with a fork. Bake at 400°F (200°C) for 8-10 minutes, until just starting to turn golden and mostly cooked through.
  5. Paint the Crackers Black: Remove the baking sheet from the oven. Using a pastry brush, carefully paint the top of each cracker with the black egg wash, including the edges.
  6. Create the Spiderwebs: Spoon the remaining black egg wash into a piping bag or zip-top bag. Snip off a tiny corner. Starting from the center of each cracker, pipe a small dot. Then, pipe concentric circles around that dot, getting wider with each circle. Using a toothpick or knife tip, drag lines from the center dot outward through the circles, creating the classic spiderweb pattern (about 6-8 times around the circle).
  7. Final Bake: Sprinkle the crackers with flaky sea salt (and everything bagel seasoning if using). Return to the oven and bake for another 8-10 minutes, until the black coating is set and the crackers are deep, matte black and crispy. Let cool completely on the baking sheet.
  8. Assemble the Board: While the crackers cool, arrange the board. Place small bowls of jam and olives in corners or along edges. Place cheeses (brie in center, cheddar wedge on one side, goat cheese log on the other). Tear prosciutto into ribbons and fold salami into little tents, placing them around the cheeses. The two-stage bake is key to avoid soggy crackers. Do not stress about perfect spiderweb designs; imperfect ones look more organic. Activated charcoal is flavorless and gives the deepest black color; black sesame paste or squid ink can be used as alternatives. Crackers can be made up to 3 days in advance and stored in an airtight container at room temperature. Re-crisp in a 300°F (150°C) oven for 3-4 minutes if needed.
