Ingredients

Scale
  • 2 cups cooked chicken, shredded or chopped (rotisserie preferred)
  • 8 oz cream cheese, softened
  • 1 cup sour cream (or Greek yogurt)
  • 1/2 cup mayonnaise
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 6 slices bacon, cooked and crumbled
  • 1 packet (1 oz) ranch seasoning mix
  • 1/4 cup chopped green onions
  • 1/2 tsp garlic powder (optional)
  • 1/4 tsp black pepper (to taste)
  • 1/4 cup diced jalapeños (optional)
  • Tortilla chips, crackers, sliced baguette, or veggie sticks for serving

Instructions

  1. Shred or chop 2 cups of cooked chicken into bite-sized pieces.
  2. Fry 6 slices of bacon in a skillet over medium heat until crispy (8-10 minutes). Drain and crumble, reserving some for topping.
  3. In a large mixing bowl, blend softened cream cheese, sour cream, and mayonnaise until smooth.
  4. Stir in ranch seasoning mix, garlic powder (if using), and black pepper. Taste and adjust seasoning.
  5. Fold in shredded cheddar and mozzarella cheeses.
  6. Add chicken, most of the crumbled bacon, green onions, and jalapeños (if using). Mix gently.
  7. Transfer mixture to a 9-inch oven-safe baking dish. Smooth the top and sprinkle reserved bacon and extra cheese.
  8. Bake at 375°F for 20-25 minutes, until bubbly and golden. For a deeper crust, broil for 2-3 minutes, watching closely.
  9. Let the dip rest for 5 minutes before serving.
  10. Serve hot with chips, crackers, or veggie sticks. Garnish with extra green onions or parsley.

Notes

Soften cream cheese for easy mixing. Use rotisserie chicken for best flavor. Adjust ranch seasoning to taste, as brands vary in saltiness. For a lighter version, use Greek yogurt and turkey bacon. Prep the base ahead and bake fresh for parties. To make in a slow cooker, combine all ingredients and heat on low for 2 hours.
