  • 1 teaspoon fresh thyme or rosemary, chopped (optional)
  • Mustard (grainy or Dijon) for serving

Instructions

  1. Peel and thinly slice the onions evenly.
  2. Heat butter and olive oil in a large skillet over medium-low heat.
  3. Add onions with a pinch of salt and cook low and slow, stirring every few minutes until golden and caramelized (about 20-25 minutes).
  4. Add minced garlic and herbs, cook for another 2 minutes, then remove onions from pan and set aside.
  5. Pour beer into the same skillet and bring to a gentle simmer over medium heat.
  6. Add bratwurst sausages, cover, and simmer for about 10 minutes to infuse flavor and cook through.
  7. Remove lid, increase heat to medium-high, and sear bratwurst turning frequently until browned and slightly crisp (5-7 minutes).
