A quick and easy frozen watermelon lemonade slushie that is perfect for hot days, combining juicy watermelon, fresh lemon juice, honey, and ice for a refreshing and balanced cold drink.

  • 4 cups (600 grams) seedless watermelon cubes, chilled
  • 1/2 cup (120 ml) fresh lemon juice
  • 2 tablespoons (30 ml) honey or agave syrup
  • 2 cups (about 300 grams) ice cubes
  • 1/4 cup (60 ml) cold water
  • Fresh mint leaves (optional, for garnish or blending)
  • Pinch of sea salt (optional)

Instructions

  1. Cut the seedless watermelon into 1-inch cubes and chill in the fridge for at least an hour.
  2. Roll lemons on the counter, cut in half, and juice until you have 1/2 cup (120 ml) fresh lemon juice. Strain out seeds.
  3. In a blender, combine watermelon cubes, fresh lemon juice, honey (or alternative sweetener), ice cubes, and cold water.
  4. Pulse the blender a few times to break up the ice, then blend continuously for 30-45 seconds until smooth and slushy. Add more cold water if too thick.
  5. Taste and adjust sweetness by adding more honey if needed. Add a pinch of salt or more watermelon if too tart.
  6. Pour into tall glasses and garnish with fresh mint leaves and a slice of lemon or watermelon if desired. Serve immediately.

Notes

Use seedless watermelon to avoid seeds in the slushie. Chill watermelon and ice well before blending for best texture. Pulse blender first to break ice and prevent overheating. Adjust sweetness gradually. For a vegan version, substitute honey with agave or maple syrup. Frozen watermelon cubes can be used instead of fresh, reducing ice amount. Add a pinch of sea salt to balance flavors if desired.
