  • 1 teaspoon fresh ginger, grated (optional)
  • 2 tablespoons vegetable oil or peanut oil
  • 2 tablespoons soy sauce (low sodium if preferred)
  • 1 tablespoon oyster sauce
  • 1 teaspoon brown sugar or honey
  • 1/4 cup (60 ml) beef broth or water
  • Optional garnishes: toasted sesame seeds, thinly sliced green onions

Instructions

  1. Thinly slice 8 oz (225 g) flank steak against the grain. In a mixing bowl, combine beef with 1 tablespoon soy sauce, 1 teaspoon cornstarch, and 1 teaspoon sesame oil. Toss well and let marinate while prepping veggies.
  2. Rinse and trim 2 cups (150 g) snow peas by snapping off fibrous strings. Mince 2 cloves garlic and grate 1 teaspoon fresh ginger if using.
  3. In a small bowl, whisk together 2 tablespoons soy sauce, 1 tablespoon oyster sauce, 1 teaspoon brown sugar or honey, and 1/4 cup (60 ml) beef broth or water. Set aside.
  4. Heat wok or large skillet over high heat and add 2 tablespoons vegetable or peanut oil. Heat until shimmering but not smoking.
  5. Add marinated beef in a single layer and stir-fry for 2-3 minutes until browned but still tender. Remove beef and set aside.
  6. Add more oil if needed, then stir-fry garlic and ginger for about 15 seconds until fragrant. Add snow peas and stir-fry for about 2 minutes until bright green and crisp-tender.
  7. Return beef to pan, pour in sauce, and toss to combine. Cook for another 1-2 minutes until sauce thickens and coats the ingredients.
  8. Garnish with toasted sesame seeds and sliced green onions if desired. Serve hot over steamed rice or noodles.

Notes

Use thin slices of beef and a hot pan to avoid chewy meat. Do not overcrowd the pan to ensure proper searing. Cornstarch in the marinade helps tenderize and create a silky texture. Cook snow peas quickly to keep them crisp and bright green. If sauce is too thin, cook a little longer to thicken.
