  • ½ cup honey (raw or wildflower preferred)
  • ¾ cup packed dark brown sugar
  • 1 can (about 20 oz) pineapple slices, drained (rings or chunks)
  • ¼ cup unsalted butter, melted
  • 2 tablespoons Dijon mustard (optional)
  • ½ teaspoon cinnamon
  • ⅛ teaspoon ground cloves (optional)
  • Freshly ground black pepper to taste
  • Maraschino cherries (optional, for garnish)

Instructions

  1. Preheat your oven to 325°F (163°C). Position your oven rack in the lower third.
  2. Remove the spiral ham from packaging, saving the juices. Place it cut side down on the roasting rack in your pan.
  3. Score the surface of the ham in a diamond pattern about ½ inch deep without cutting through the slices.
  4. In a medium bowl, whisk together honey, brown sugar, melted butter, Dijon mustard, cinnamon, ground cloves, and freshly ground black pepper until smooth.
  5. Using a basting brush, coat the ham with about half the glaze. Reserve the rest for later.
  6. Arrange pineapple slices over the ham, tucking maraschino cherries in the center of each ring if desired. Secure with toothpicks.
  7. Cover the ham loosely with aluminum foil and bake for about 1 hour 15 minutes (15 minutes per pound).
  8. Halfway through baking, remove the foil, baste with remaining glaze, and bake uncovered to caramelize the glaze, watching closely to avoid burning.
  9. Check internal temperature with a meat thermometer to ensure it reaches 140°F (60°C).
  10. Remove the ham from the oven and tent with foil. Let rest for 15 minutes.
  11. Carve along the spiral cuts, plate with extra pineapple, and drizzle any pan juices or leftover glaze over the top.

Notes

Apply glaze in stages to prevent burning and build flavor. Use toothpicks to secure pineapple slices. Rest ham after baking for juicier slices. If glaze thickens too much, loosen with pineapple juice. For dairy-free, substitute butter with coconut oil. For gluten-free, ensure mustard is gluten-free.
