  • ½ cup milk of choice (120 ml) – whole milk, almond, or oat milk
  • A pinch of salt
  • ½ cup pomegranate seeds (about 90 g)
  • 2 tablespoons raw, local honey
  • ½ teaspoon vanilla extract (optional)
  • ¼ teaspoon cinnamon
  • 2 tablespoons chopped nuts (walnuts or almonds, optional)

Instructions

  1. Toast the oats (optional but recommended): Heat a medium saucepan over medium heat and add the steel-cut oats. Stir frequently for 2-3 minutes until they smell nutty.
  2. Add water and salt: Pour in 1 ½ cups water and a pinch of salt. Bring to a boil, then reduce heat to low and simmer gently, uncovered, stirring occasionally to prevent sticking. Cook for about 15-20 minutes until the oats start to soften but still have bite.
  3. Add milk, cinnamon, and vanilla: Stir in ½ cup milk of choice, ¼ teaspoon cinnamon, and ½ teaspoon vanilla extract. Continue simmering for another 5-7 minutes, stirring often, until the oats are creamy and tender.
  4. Prepare the honey drizzle: In a small bowl, whisk together 2 tablespoons honey with a teaspoon of warm water to loosen it up if needed.
  5. Assemble your bowl: Spoon the oatmeal into a serving bowl. Scatter ½ cup fresh pomegranate seeds and optional chopped nuts over the top.
  6. Drizzle honey: Drizzle the honey mixture generously over the oatmeal and pomegranate.
  7. Serve immediately while warm.
