A quick and easy fresh dessert bowl combining creamy cottage cheese, fresh raspberries, and a drizzle of honey for a light, sweet treat perfect for Valentine’s Day or any occasion.

  • 1 cup (240 ml) small-curd cottage cheese, preferably full-fat
  • ½ cup (75 g) fresh raspberries, washed and drained
  • 2 tablespoons (30 ml) raw or wildflower honey
  • ½ teaspoon (2.5 ml) pure vanilla extract
  • 2 tablespoons (15 g) toasted chopped nuts (optional, almonds or walnuts)
  • Small handful fresh mint leaves, roughly chopped (optional for garnish)

Instructions

  1. Scoop 1 cup (240 ml) of small-curd cottage cheese into a mixing bowl. For a creamier texture, pulse it 3-4 times in a blender or food processor; otherwise, keep it chunky.
  2. Stir in ½ teaspoon (2.5 ml) pure vanilla extract and 2 tablespoons (30 ml) honey. Mix gently but thoroughly.
  3. Gently fold in ½ cup (75 g) fresh raspberries, taking care not to crush them.
  4. Optionally, sprinkle 2 tablespoons (15 g) toasted chopped nuts on top and add fresh mint leaves for garnish.
  5. Serve immediately or chill in the refrigerator for 10-15 minutes to let flavors meld and honey thicken slightly.

Notes

If raspberries are very juicy, drain them on paper towels before folding in to avoid watery texture. Adjust honey to taste for sweetness. Do not over-blend cottage cheese to prevent watery consistency. Store leftovers in an airtight container in the fridge for up to 2 days; avoid freezing.
