Instructions

  1. Toast the coconut: Place 2 tablespoons of shredded coconut in a dry skillet over medium heat. Stir frequently for about 2-3 minutes until golden and fragrant. Remove from heat immediately to avoid burning.
  2. Prepare the strawberries: Hull and slice 1 cup of fresh strawberries. Set aside.
  3. Mix the yogurt base: In a medium mixing bowl, combine 1 cup of full-fat Greek yogurt with 1 tablespoon honey (or maple syrup) and Β½ teaspoon vanilla extract. Stir gently until smooth and evenly blended. Taste and adjust sweetness if needed.
  4. Assemble the bowl: Spoon the yogurt mixture into your serving bowl(s). Evenly distribute the sliced strawberries on top.
