Instructions

  1. In a medium bowl, combine 3 tablespoons of chia seeds with 1 cup of coconut milk. Add 1-2 teaspoons of maple syrup or honey and ½ teaspoon of vanilla extract. Add a tiny pinch of salt.
  2. Whisk thoroughly using a whisk or fork to prevent chia seeds from clumping and to ensure a smooth pudding texture.
  3. Cover the bowl with plastic wrap or a lid and refrigerate for at least 2 hours, preferably overnight, to allow the chia seeds to absorb the liquid and thicken.
  4. After chilling, stir the pudding well. If too thick, add a splash of coconut milk and stir again. If too thin, add a bit more chia seeds and let rest for another 30 minutes.
  5. Slice the banana and prepare shredded coconut and fresh berries if using.
  6. Spoon the chia pudding into serving bowls or jars. Top with banana slices, shredded coconut, and berries.
  7. Serve immediately or chill until ready to eat. For best flavor, let it rest for another 15 minutes before serving.
