  • 1 loaf French baguette or Italian bread, sliced 1/2 inch thick

Instructions

  1. Wash and dry the tomatoes. Dice them into about 1/2 inch pieces and place into a mixing bowl.
  2. Roll the basil leaves into a tight bundle and slice thinly (chiffonade). Toss the basil into the tomatoes.
  3. Mince the garlic finely or use a garlic press, then add it to the bowl.
  4. Drizzle the extra virgin olive oil and balsamic vinegar over the tomatoes. Sprinkle with kosher salt and freshly ground black pepper. Stir gently to combine. Let sit for 10 minutes at room temperature.
  5. Slice the baguette or Italian bread into 1/2 inch thick pieces. Toast them in a preheated oven at 375°F (190°C) for 8-10 minutes until golden and crisp, or toast on a skillet over medium heat for 2-3 minutes per side.
  6. Spoon the tomato mixture generously onto each toasted bread slice. Sprinkle with grated Parmesan cheese if desired.
