These fresh smoked salmon cucumber bites topped with dill cream cheese are a quick, elegant, and light appetizer perfect for entertaining or a healthy snack.

Ingredients

Scale
  • 1 large English cucumber (firm and seedless preferred)
  • 6 ounces thinly sliced high-quality smoked salmon
  • 4 ounces softened full-fat cream cheese
  • 2 tablespoons finely chopped fresh dill
  • 1 teaspoon freshly squeezed lemon juice
  • 1/4 teaspoon garlic powder (optional)
  • Salt and pepper to taste
  • 1 tablespoon capers (optional garnish)

Instructions

  1. Rinse the cucumber under cold water and pat dry. Slice into 1/4-inch (about 6 mm) thick rounds. Scoop out seeds if large or watery. Drain on paper towel for 5 minutes.
  2. In a medium bowl, combine softened cream cheese, chopped dill, lemon juice, and garlic powder if using. Stir until smooth and fluffy. Season with salt and pepper. Add a tiny drizzle of milk or water if too stiff.
  3. Spread about 1 teaspoon of dill cream cheese on each cucumber slice. Fold or curl a small piece of smoked salmon and place on top. Add a caper if desired.
  4. Place assembled bites on a platter and chill for at least 10 minutes to meld flavors and firm cream cheese.
  5. Serve chilled or at room temperature. Consume within 2 hours for best texture.

Notes

Use English or Persian cucumbers for less bitterness and thinner skins. Pat cucumber slices dry to avoid sogginess. Soften cream cheese well for easy spreading. Assemble just before serving to keep bites crisp. Fresh dill is preferred over dried for best flavor. Can substitute cream cheese with vegan alternatives for dairy-free option.
