A refreshing and creamy tropical drink combining fresh pineapple, coconut milk, water, and a touch of sweetener. Perfect for warm weather and quick to prepare.

  • 2 cups fresh pineapple, chopped (about 300 grams)
  • 1 cup full-fat canned coconut milk (240 ml)
  • 2 cups cold water (480 ml)
  • 12 tablespoons sweetener (organic cane sugar, honey, or agave syrup)
  • 1 tablespoon fresh lime juice (about half a lime)
  • Ice cubes (optional, for serving)

Instructions

  1. Peel and core a fresh pineapple, then chop into 1-inch chunks. Measure about 2 cups (300 grams).
  2. In a blender, combine pineapple chunks, 1 cup coconut milk, 2 cups cold water, 1-2 tablespoons sweetener, and 1 tablespoon fresh lime juice.
  3. Blend on high speed until smooth and creamy, about 1 minute.
  4. Taste and adjust sweetness or thickness by adding more sweetener or water as needed, blending briefly again.
  5. Optional: Pour the mixture through a fine mesh strainer into a pitcher for a smoother texture, pressing gently to extract liquid.
  6. Serve chilled over ice cubes, garnished with a pineapple wedge or fresh mint if desired.

Notes

Use ripe, golden pineapple for best sweetness. For a smoother texture, strain the blended mixture. Adjust sweetness gradually. Keep the drink cold and serve over ice. If using frozen pineapple, thaw for 15-20 minutes before blending. Coconut water can substitute coconut milk for a lighter version.
