  • 1 medium cucumber, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1 ripe avocado, sliced
  • 45 radishes, thinly sliced
  • 2 tbsp fresh herbs (parsley or cilantro), chopped
  • 2 tbsp extra virgin olive oil
  • 1 tbsp freshly squeezed lemon juice
  • Salt and pepper to taste
  • Optional toppings: toasted seeds (pumpkin or sunflower), crumbled feta cheese

Instructions

  1. Bring a medium saucepan filled with water to a gentle boil. Carefully lower 4 large eggs into the water using a slotted spoon. Set a timer for exactly 6 minutes for creamy yolks (7 minutes for slightly firmer yolks).
  2. Once time is up, transfer eggs immediately to an ice bath. Let cool for 5 minutes to stop cooking and make peeling easier.
  3. While eggs cool, wash and dry mixed greens thoroughly. Thinly slice cucumber, radishes, and halve cherry tomatoes. Slice avocado right before serving to avoid browning. Chop fresh herbs finely.
  4. In a small bowl, whisk together 2 tablespoons extra virgin olive oil, 1 tablespoon fresh lemon juice, and a pinch of salt and pepper to make the dressing.
  5. Gently tap and roll each egg on the counter to crack the shell, then peel carefully under running water to keep the whites intact. Slice eggs in half lengthwise to reveal creamy yolks.
  6. In a large bowl, toss mixed greens, cucumber, radishes, cherry tomatoes, avocado slices, and fresh herbs with the dressing.
  7. Arrange the soft-boiled egg halves on top, sprinkle with optional toasted seeds or crumbled feta if using.
  8. Give the bowl a gentle sprinkle of freshly cracked black pepper and an extra drizzle of olive oil if desired. Serve immediately.
