Ingredients

  • 4 large eggs (preferably organic or free-range)
  • 6 cups curly kale, stems removed and leaves chopped
  • 1 large lemon, juiced and zested
  • 2 tablespoons extra virgin olive oil
  • 2 cloves garlic, minced
  • Salt and freshly ground black pepper, to taste
  • Pinch of red pepper flakes (optional)
  • 1 cup cherry tomatoes, halved
  • 1 ripe avocado, sliced
  • Optional toppings: toasted sesame seeds, chopped fresh parsley, balsamic glaze

Instructions

  1. Fill a medium saucepan with water to cover the eggs by about an inch (approx. 4 cups). Bring to a gentle boil over medium-high heat.
  2. Gently lower 4 large eggs into the boiling water using a slotted spoon.
  3. Boil eggs for exactly 6 minutes for soft-boiled eggs with slightly runny yolks.
  4. Transfer eggs to a bowl of ice water to stop cooking and chill for at least 5 minutes before peeling.
  5. While eggs cook, wash and chop 6 cups of kale, removing thick stems.
  6. Heat 2 tablespoons of extra virgin olive oil in a large skillet over medium heat.
  7. Add minced garlic and cook for about 30 seconds until fragrant but not browned.
  8. Add kale to the skillet, stirring to coat with oil and garlic. Cook for 4-5 minutes until kale is tender but still has some bite.
  9. Remove skillet from heat. Stir in lemon juice and zest, salt, pepper, and optional red pepper flakes. Toss well to combine.
  10. In a large serving bowl, combine lemony kale with halved cherry tomatoes and sliced avocado. Gently toss to mix flavors.
  11. Peel the cooled eggs carefully, slice each egg in half, and nestle them atop the kale mixture.
  12. Sprinkle optional toasted sesame seeds or chopped fresh parsley over the bowl. Drizzle balsamic glaze if desired.
  13. Serve immediately while egg yolks are creamy and kale is bright and lively.

Notes

Use room temperature eggs for more even cooking. Adjust boiling time by 30 seconds less if eggs turn out too firm. Always use an ice bath after boiling to stop cooking and make peeling easier. Cook kale in batches if your pan is small to avoid overcrowding and maintain texture.
