A quick and easy refreshing drink made with fresh strawberries and creamy coconut milk, perfect for warm weather and a healthy treat.

  • 1 cup fresh strawberries, hulled and sliced
  • 1 cup (240 ml) full-fat coconut milk
  • 1 cup (240 ml) cold water
  • 2 tablespoons sweetener (simple syrup, honey, or agave)
  • 1 tablespoon freshly squeezed lemon juice
  • Ice cubes (about ½ cup / 120 grams per serving)
  • Optional: ¼ teaspoon vanilla extract
  • Optional: Fresh mint leaves for garnish

Instructions

  1. Rinse 1 cup (about 150 grams) of fresh strawberries under cold water. Hull and slice them roughly to help the blending process.
  2. Place the sliced strawberries into your blender. Add ¼ cup (60 ml) of the cold water and 2 tablespoons of your chosen sweetener. Blend on high for about 30 seconds until smooth but still slightly textured. Add more water if the puree is too thick.
  3. In a large glass or bowl, pour 1 cup (240 ml) of full-fat coconut milk. Stir in 1 tablespoon of fresh lemon juice and optional ¼ teaspoon of vanilla extract.
  4. Pour the blended strawberries into the coconut milk mixture. Stir gently to combine evenly until the liquid takes on a pale pink hue.
  5. Fill serving glasses with ice cubes (about ½ cup / 120 grams per glass). Pour the strawberry coconut refresher over the ice. Garnish with fresh mint leaves if desired.

Notes

Use ripe, sweet strawberries for best flavor. Do not skip the lemon juice to balance sweetness. Keep coconut milk cold to maintain silky texture. For a thicker drink, blend ice cubes with the mixture instead of adding them at the end. Adjust sweetener to taste. Store leftovers in an airtight container in the fridge for up to 24 hours and stir before serving.
