  • 1 cup (about 150g) fresh strawberries, hulled and sliced
  • 1 ounce (28g) dark chocolate, shaved or finely chopped (70% cocoa or higher)
  • 1 teaspoon honey or maple syrup (optional)
  • ¼ teaspoon vanilla extract (optional)
  • 1 tablespoon chopped almonds or walnuts (optional)
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Wash, hull, and slice about 1 cup (150g) of fresh strawberries. If using frozen, thaw completely and drain excess liquid.
  2. In a mixing bowl, combine 1 cup (225g) small-curd cottage cheese with ¼ teaspoon vanilla extract and 1 teaspoon honey or maple syrup if desired. Stir gently to blend.
  3. Fold the sliced strawberries into the cottage cheese gently to keep berries intact and evenly distributed.
  4. Using a vegetable peeler or grater, shave 1 ounce (28g) of dark chocolate into thin curls or flakes. Chill chocolate for 10 minutes beforehand if soft.
  5. Spoon the cottage cheese and strawberry mixture into a serving bowl. Sprinkle dark chocolate shavings evenly on top. Add chopped nuts and fresh mint leaves if using.
  6. Serve immediately or refrigerate for 10-15 minutes to let flavors meld and serve chilled.

Notes

Use small-curd cottage cheese for creamier texture. Chill chocolate before shaving to avoid crumbling. Fresh ripe strawberries provide best flavor. Optionally add honey or maple syrup for sweetness.
