  • 1 cup (240ml) whole milk, room temperature
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350Β°F (175Β°C). Grease your baking dish thoroughly with unsalted butter.
  2. Pit about 2 cups (300g) of fresh cherries. Set aside.
  3. In a medium bowl, sift together Β½ cup (60g) all-purpose flour, β…“ cup (65g) granulated sugar, and a pinch of salt.
  4. In a separate large bowl, whisk 3 large eggs until frothy and light in color, about 1-2 minutes.
  5. Slowly whisk in 1 cup (240ml) room temperature whole milk and 1 teaspoon vanilla extract until smooth.
  6. Gradually add the dry ingredients into the wet mixture, whisking gently to combine until smooth and pourable.
  7. Pour the batter into the prepared baking dish. Scatter the pitted cherries evenly over the surface, gently pressing some into the batter.
  8. Bake for 35-40 minutes until puffed and golden brown around the edges and a toothpick inserted comes out clean or with a few moist crumbs.
  9. Let cool for about 10 minutes; it will deflate slightly. Dust with powdered sugar if desired before serving.

Notes

Use room temperature eggs and milk for a smoother, fluffier batter. Avoid overmixing to prevent a dense texture. If edges brown too quickly, tent with foil. Frozen cherries can be used if thawed and drained well. Let the clafoutis cool before slicing to firm up.
