  • 1 large egg, room temperature

  • 1/3 cup (80ml) vegetable oil or melted butter
  • 1 teaspoon vanilla extract
  • 2 medium apples, peeled, cored, and diced into 1/2-inch pieces
  • 2 tablespoons unsalted butter
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • Optional: a pinch of nutmeg or ground cloves

Instructions

  1. Preheat your oven to 375°F (190°C). Grease the muffin tin with butter or line with paper liners.
  2. In a small skillet over medium heat, melt the 2 tablespoons butter. Add diced apples, brown sugar, cinnamon, and a pinch of nutmeg if using. Cook for 5-7 minutes until apples are tender but hold their shape. Set aside to cool slightly.
  3. In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
  4. In a separate medium bowl, whisk granulated sugar, brown sugar, egg, buttermilk, oil, and vanilla extract until smooth and slightly frothy.
  5. Pour the wet mixture into the dry ingredients and gently fold with a spatula just until combined; do not overmix.
  6. Fold in the cooked apples carefully to distribute evenly.
  7. Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
  8. Bake for 18-22 minutes, checking at 18 minutes with a toothpick; it should come out clean or with a few moist crumbs.
  9. Remove muffins from oven and cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
