  • 2 tbsp water
  • 8 oz cream cheese, softened
  • 1 cup sour cream (full fat recommended)
  • 1 cup shredded cheddar cheese
  • 1 cup diced tomatoes (canned drained or fresh Roma)
  • 1/2 cup chopped green onions (about 45 stalks)
  • 1/2 cup sliced black olives (optional)
  • 1/2 cup chopped fresh cilantro
  • 1 cup shredded Monterey Jack cheese
  • 1 small can (4 oz) sliced jalapeños (optional)

Instructions

  1. Heat skillet over medium heat. Add ground beef, break apart, and cook 6-8 minutes until browned. Drain excess grease if needed.
  2. Sprinkle taco seasoning over cooked beef, add 2 tbsp water, stir well, and simmer 2-3 minutes until liquid reduces. Remove from heat and cool slightly.
  3. In a mixing bowl, combine softened cream cheese and sour cream until smooth and creamy.
  4. Spread creamy base evenly in bottom of 9×9-inch dish. Sprinkle shredded cheddar cheese evenly over cream layer.
  5. Spread seasoned ground beef evenly over cheese layer.
  6. Scatter diced tomatoes, chopped green onions, sliced black olives, and chopped cilantro over beef layer.
  7. Sprinkle shredded Monterey Jack cheese on top. Add sliced jalapeños if desired.
  8. Cover dish with plastic wrap and refrigerate at least 1 hour to let flavors meld and layers firm up.
  9. Remove from refrigerator 10 minutes before serving to take chill off. Serve with tortilla chips or fresh veggies.

Soften cream cheese before mixing to avoid lumps. Drain beef grease well to prevent soggy dip. Chill dip for at least 1 hour for best flavor and texture.
