Instructions

  1. Prepare the chicken by finely chopping or pulsing in a food processor until coarsely ground (about 5 minutes).
  2. Make the sauce by whisking together honey, soy sauce, sesame oil, rice vinegar, minced garlic, and grated ginger until smooth (about 3 minutes). Adjust sweetness or acidity to taste.
  3. Heat a large non-stick skillet or wok over medium-high heat and add a drizzle of neutral oil (canola or avocado).
  4. Add the chicken and cook, stirring frequently, until cooked through and starting to brown, about 6-8 minutes. Avoid overcrowding the pan.
  5. Pour the sauce over the chicken, reduce heat to medium-low, and stir continuously to coat evenly. Simmer for 3-4 minutes until the sauce thickens to a sticky glaze. Add a splash of water if too thick.
  6. While the chicken simmers, separate and wash the lettuce leaves, then pat dry with paper towels (about 5 minutes).
  7. Assemble the wraps by spooning a generous amount of sticky chicken onto each lettuce leaf. Garnish with sliced green onions, toasted sesame seeds, and chili flakes if desired.
