  • 1 tablespoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil
  • ½ cup chicken broth or water
  • 1 cup plain Greek yogurt
  • 1 chipotle pepper in adobo sauce, minced
  • 1 tablespoon fresh lime juice
  • 1 teaspoon honey
  • Salt to taste
  • 2 cups cooked brown rice or quinoa
  • 1 cup shredded green cabbage
  • 1 avocado, sliced
  • ½ cup chopped fresh cilantro
  • 1 lime, cut into wedges
  • Optional: pickled jalapeños

Instructions

  1. Pat the pork shoulder dry with paper towels. Mix smoked paprika, cumin, garlic powder, onion powder, salt, and pepper in a small bowl. Rub the spice mix all over the pork.
  2. Heat olive oil in a Dutch oven over medium-high heat. Sear the pork on all sides until browned, about 3-4 minutes per side. (Skip if using slow cooker.)
  3. Add chicken broth to the pot, cover, and reduce heat to low. Braise pork gently for 3-4 hours until tender. If using slow cooker, cook on low for 6-7 hours or high for 4 hours.
  4. Transfer pork to a cutting board and shred with two forks. Return shredded pork to pot with cooking juices and stir to coat.
  5. In a small bowl, combine Greek yogurt, minced chipotle pepper, lime juice, honey, and salt. Stir until smooth and adjust seasoning as desired.
  6. Divide cooked rice or quinoa into bowls. Top with shredded cabbage, pulled pork, avocado slices, cilantro, and drizzle with chipotle-lime yogurt. Garnish with lime wedges and optional pickled jalapeños.

Notes

Searing the pork before slow cooking adds depth of flavor. Use fresh lime juice for best brightness. Keep cooking juices to moisten pork during assembly. Adjust chipotle pepper to control heat. Yogurt drizzle can be swapped with dairy-free yogurt for vegan option.
