  • 2 tbsp olive oil (plus extra for roasting)
  • 2 cloves garlic, minced

  • Juice of 1 lime
  • 1 medium head cauliflower, cut into florets
  • 1 tbsp olive oil

  • 1 cup cooked quinoa or brown rice (optional)
  • Fresh cilantro, chopped
  • ½ cup diced avocado
  • 1 small red onion, thinly sliced
  • 1 jalapeño, thinly sliced (optional)
  • Greek yogurt or sour cream (optional)

Instructions

  1. In a large bowl, combine olive oil, minced garlic, smoked paprika, chili powder, cumin, lime juice, salt, and pepper. Toss the thinly sliced steak in the marinade, making sure every piece is coated. Cover and let it rest for at least 15 minutes at room temperature or up to 2 hours in the fridge.
  2. Preheat oven to 425°F (220°C). Toss cauliflower florets with olive oil, garlic powder, smoked paprika, salt, and pepper on a baking sheet. Spread evenly.
  3. Roast cauliflower for 20-25 minutes, flipping halfway through, until golden brown and tender.
  4. Heat skillet over medium-high heat until very hot. Add oil if needed. Sear steak slices in batches for 2-3 minutes per side for medium-rare. Remove and let rest.
  5. Warm cooked quinoa or brown rice if using. Slice red onion, jalapeño, chop cilantro, and dice avocado.
  6. Assemble bowl starting with quinoa or rice base, add roasted cauliflower, top with steak slices, then garnish with cilantro, red onion, jalapeño, avocado, and a dollop of Greek yogurt or sour cream if desired.

Notes

Let the steak rest after cooking for juicy bites. Adjust seasoning and spice levels to taste. Use quinoa for gluten-free base or cauliflower rice for low-carb. Reheat leftovers gently to maintain texture and flavor.
