  • 3 tablespoons unsalted butter, divided
  • 4 cloves garlic, minced
  • 1/4 cup dry white wine or chicken broth
  • 1 tablespoon fresh lemon juice
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons freshly chopped parsley (optional)
  • 2 cups shredded mozzarella cheese
  • 1 cup cherry tomatoes, halved
  • 1 cup diced cucumber
  • 1/2 cup sliced black olives
  • 1/2 cup finely chopped red onion (optional)
  • 2 cups shredded romaine lettuce or mixed greens
  • 1/2 cup cooked bacon bits or crispy pancetta (optional)
  • 1/3 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 2 tablespoons honey
  • 1 tablespoon apple cider vinegar
  • Salt and pepper, to taste

Instructions

  1. Prepare the Shrimp Scampi: In a large skillet over medium heat, melt 2 tablespoons of butter. Add the minced garlic and sautΓ© for about 1 minute until fragrant but not browned.
  2. Add the shrimp to the pan in a single layer. Season with salt and pepper. Cook for 2 minutes on one side until pink and opaque, then flip.
  3. Pour in the white wine (or chicken broth) and lemon juice. Let it simmer gently for another 2-3 minutes until the shrimp are fully cooked and the liquid reduces slightly. Stir occasionally.
  4. Turn off the heat and stir in the remaining 1 tablespoon of butter until melted and the sauce is silky. Sprinkle with chopped parsley if using. Set aside to cool slightly.
  5. Make the Honey Mustard Dressing: In a medium bowl, whisk together mayonnaise, Dijon mustard, honey, apple cider vinegar, salt, and pepper until smooth and creamy. Refrigerate until ready to use.
  6. Assemble the Seven Layers: In your serving bowl, start with a layer of shredded romaine lettuce or mixed greens, pressing down lightly.
  7. Evenly distribute half of the cooled shrimp scampi over the greens.
  8. Sprinkle half of the shredded mozzarella cheese over the shrimp, followed by half of the cherry tomatoes, cucumber, black olives, and red onion.
  9. Repeat the layers with the remaining shrimp, cheese, tomatoes, cucumber, olives, and onions, pressing lightly as you go.
  10. Top the final layer with crispy bacon bits or pancetta if using.
  11. Drizzle the honey mustard dressing generously over the top layer. Serve extra dressing on the side if desired.

Notes

Allow shrimp to cool slightly before layering to prevent cheese from melting. Prepare shrimp and dressing ahead of time for convenience. Avoid microwaving assembled bowl to prevent sogginess. Use chilled veggies and dressing to keep the bowl fresh and crisp.
