  • 1 lb (450 g) sirloin or flank steak, thinly sliced
  • 1 can (15 oz / 425 g) chickpeas, drained and rinsed
  • 3 tbsp olive oil, divided
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 4 cups (120 g) baby spinach or mixed greens, fresh
  • 1 cup (150 g) cherry tomatoes, halved (optional)
  • 1 small red onion, thinly sliced (optional)
  • 1/2 cup (75 g) feta cheese, crumbled (optional)
  • 2 tbsp lemon juice, freshly squeezed
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Preheat your oven to 400Β°F (200Β°C). Line a baking sheet with parchment paper.
  2. Drain and rinse the canned chickpeas thoroughly, then pat dry with paper towels.
  3. Toss chickpeas with 2 tablespoons olive oil, smoked paprika, cumin, garlic powder, salt, and pepper.
  4. Spread chickpeas evenly on the baking sheet and roast for 25-30 minutes, shaking the pan halfway through, until golden and crispy.
  5. While chickpeas roast, pat steak strips dry and season generously with salt and pepper.
  6. Heat 1 tablespoon olive oil in a cast iron skillet over medium-high heat until shimmering.
  7. Sear steak strips in a single layer for 2-3 minutes per side for medium-rare, or longer for desired doneness. Remove from heat and let rest.
  8. Prepare fresh ingredients: rinse greens, halve cherry tomatoes, thinly slice red onion, and crumble feta if using.
  9. Toss greens with lemon juice and a pinch of salt.
  10. Assemble the bowl by layering greens, roasted chickpeas, steak strips, tomatoes, onions, and feta.
  11. Garnish with fresh parsley and finish with a squeeze of lemon juice and a crack of black pepper before serving.

Notes

Pat steak strips dry before searing to get a good crust. Avoid overcrowding the pan to prevent steaming. Roast chickpeas at high heat and shake pan halfway through to ensure even crisping. Let steak rest for 5 minutes before assembling. Reheat leftovers in a skillet to keep chickpeas crispy; avoid microwaving.
