Flavorful Lemon Herb Grilled Chicken Thighs Recipe with Easy Creamy Tzatziki Dip

A quick and easy grilled chicken thigh recipe marinated in lemon and fresh herbs, served with a creamy homemade tzatziki dip. Perfect for busy weeknights or casual gatherings.

  • 6 bone-in, skin-on chicken thighs
  • Juice and zest of 2 lemons
  • 3 tablespoons extra virgin olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh oregano, chopped
  • 1 teaspoon fresh rosemary, chopped
  • 1 teaspoon fresh thyme, chopped
  • Salt and pepper to taste
  • ¼ teaspoon red pepper flakes (optional)
  • 1 cup (240g) Greek yogurt
  • 1 medium cucumber, seeded and finely grated
  • 1 tablespoon fresh dill, chopped
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice or white vinegar
  • Salt to taste

Instructions

  1. Prepare the marinade by whisking together lemon juice and zest, olive oil, minced garlic, oregano, rosemary, thyme, salt, pepper, and optional red pepper flakes in a medium bowl.
  2. Pat chicken thighs dry and coat them thoroughly with the marinade. Cover and refrigerate for at least 30 minutes, up to 4 hours.
  3. Make the tzatziki dip by squeezing excess moisture from the grated cucumber, then mixing it with Greek yogurt, dill, minced garlic, lemon juice or vinegar, and salt. Chill until serving.
  4. Preheat grill to 375-400°F (190-205°C) and oil the grates to prevent sticking.
  5. Grill chicken thighs skin-side down for 7-10 minutes until skin is golden and crisp. Flip and grill another 7-10 minutes until internal temperature reaches 165°F (74°C).
  6. Remove chicken from grill and let rest for 5 minutes to redistribute juices.
  7. Serve chicken thighs with a generous dollop of tzatziki, garnished with lemon wedges and fresh herbs if desired.

Notes

Pat chicken skin dry before marinating for crispier skin. Oil grill grates well to prevent sticking. Use a two-zone grill setup for best results. Let chicken rest after grilling to keep it juicy. Prepare tzatziki ahead for better flavor melding. If no grill, bake at 425°F (220°C) on a wire rack for 25-30 minutes or use a grill pan.
