  • 3 ounces goat cheese crumbles (about 85 grams)
  • Lemon zest from ½ lemon (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel and cut about 1.5 pounds (700 grams) of rainbow carrots into sticks roughly 3 inches (7.5 cm) long and about ½ inch (1.3 cm) thick, keeping them uniform for even roasting.
  3. In a large bowl, combine 2 tablespoons honey, 2 tablespoons olive oil, 2 teaspoons fresh thyme leaves, a pinch of salt, and a few grinds of black pepper. Whisk until fully blended.
  4. Add the carrot sticks to the bowl and toss thoroughly to coat each piece with the honey-thyme mixture.
  5. Line a rimmed baking sheet with parchment paper or a silicone baking mat. Spread the carrots out in a single layer, ensuring they have space to roast and not steam.
  6. Roast in the oven for 20 to 25 minutes, flipping the carrots halfway through. The edges should turn golden and caramelized while the carrots remain tender with a slight bite.
  7. Remove the carrots from the oven and transfer to a serving dish. While still warm, crumble about 3 ounces (85 grams) of goat cheese over the top. Optionally, zest half a lemon over everything for brightness.
  8. Serve warm or at room temperature.
