Instructions

  1. Prepare the Peach Glaze: In a blender or food processor, combine the diced peaches, honey, apple cider vinegar, minced garlic, and fresh thyme. Blend until smooth. Pour the mixture into a small saucepan.
  2. Simmer the Glaze: Heat the saucepan over medium heat, stirring occasionally. Let the glaze simmer until it thickens slightly and becomes glossy—about 10 to 12 minutes. Remove from heat and set aside.
  3. Season the Pork Chops: Pat pork chops dry with paper towels. Rub both sides with olive oil, then season generously with salt, pepper, and smoked paprika. Let them rest at room temperature for 5 minutes to absorb the flavors.
  4. Preheat the Grill: Get your grill hot and ready—medium-high heat, around 400°F (204°C).
  5. Grill the Pork Chops: Place the pork chops on the grill. Cook for about 6-7 minutes per side. During the last 3 minutes, brush the sweet peach glaze generously on both sides. Watch the glaze carefully to avoid burning.
  6. Check for Doneness: Use a meat thermometer to ensure the internal temperature reaches 145°F (63°C). If unavailable, cut into the thickest part to check that the juices run clear.
