This grilled corn on the cob features a smoky, tangy chipotle lime butter that transforms simple corn into a flavorful summer favorite. Quick and easy to prepare, it’s perfect for backyard gatherings and pairs well with a variety of dishes.

  • 4 ears fresh corn on the cob, husked and cleaned
  • 4 tablespoons unsalted butter, softened
  • 1 teaspoon chipotle powder
  • Juice of 1 medium lime
  • ½ teaspoon garlic powder
  • ½ teaspoon salt, or to taste
  • 2 tablespoons fresh cilantro, finely chopped (optional)
  • 1 tablespoon olive oil
  • Cotija cheese (optional, for garnish)

Instructions

  1. In a medium bowl, combine 4 tablespoons softened unsalted butter with 1 teaspoon chipotle powder, juice of 1 lime, ½ teaspoon garlic powder, and ½ teaspoon salt. Whip together using a fork or small whisk until fluffy and well blended. Set aside for about 10 minutes.
  2. Remove husks and silk from each ear of corn. Lightly brush the ears with 1 tablespoon olive oil to prevent sticking on the grill.
  3. Preheat grill to medium-high heat, about 375°F (190°C). If using charcoal, wait until coals are covered with gray ash.
  4. Place corn directly on grill grates. Grill for 10-12 minutes, turning every 2-3 minutes with tongs until kernels are tender with char marks and smoky aroma.
  5. Remove corn from grill and generously slather with the chipotle lime butter, letting it melt into every crevice.
  6. Optionally, sprinkle with chopped fresh cilantro and cotija cheese for extra flavor and texture.
  7. Serve immediately while hot for best taste.

Notes

If butter firms up before serving, stir or warm slightly to restore spreadable texture. For dairy-free, substitute butter with coconut oil blend and use dairy-free yogurt with lime for brushing. Can also cook corn in oven wrapped in foil at 400°F for 20-25 minutes if no grill is available. Leftovers keep up to 2 days refrigerated; reheat on grill or skillet, avoid microwave.
