A delicious and easy-to-make seven-layer party bowl featuring tender turkey meatballs layered with beans, corn, guacamole, salsa, cheese, and fresh veggies. Perfect for game day snacks or casual gatherings.

  • 1 lb ground turkey (preferably lean, 93/7)
  • 1/4 cup breadcrumbs (use gluten-free if needed)
  • 1/4 cup grated Parmesan cheese
  • 1 large egg, room temperature
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 1 cup canned black beans, drained and rinsed
  • 1 cup frozen corn, thawed (or fresh if in season)
  • 1 cup guacamole (store-bought or homemade)
  • 1 cup salsa verde or red salsa
  • 1 cup shredded sharp cheddar cheese (or Mexican blend)
  • 1/2 cup diced red onion
  • 1/2 cup chopped fresh cilantro
  • Optional: sliced jalapeños or diced tomatoes

Instructions

  1. In a large mixing bowl, combine ground turkey, breadcrumbs, grated Parmesan, egg, minced garlic, ground cumin, smoked paprika, salt, and pepper. Mix gently until just combined.
  2. Roll the mixture into approximately 1-inch meatballs, about 20 pieces. Place them on a plate or tray.
  3. Heat olive oil in a large skillet over medium heat. Add meatballs in batches and cook for about 5-6 minutes per side until browned and cooked through (internal temperature 165°F).
  4. While meatballs cook, rinse and drain black beans, thaw corn, dice red onion, chop cilantro, and shred cheese. Have guacamole and salsa ready.
  5. In a large clear bowl, layer black beans, corn, guacamole, salsa, diced red onions, chopped cilantro, cooked turkey meatballs, and shredded cheese. Add optional jalapeños or diced tomatoes if desired.
  6. Serve immediately with tortilla chips, warm tortillas, or veggies. Optionally, heat the assembled bowl in a 350°F oven for 5 minutes for melty cheese.

Notes

Do not overmix the turkey mixture to keep meatballs tender. Cook meatballs in batches to avoid steaming. Use a clear bowl to showcase layers. For melty cheese, heat assembled bowl in oven at 350°F for 5 minutes. Leftovers keep well refrigerated for up to 3 days. Meatballs can be frozen separately for up to 3 months.
