Instructions

  1. Preheat oven to 425Β°F (220Β°C). Line a baking sheet with parchment paper.
  2. Peel and cut carrots into 1/2-inch sticks or rounds. Toss with 2 tablespoons olive oil, salt, and pepper. Spread evenly on baking sheet.
  3. Roast carrots for 20-25 minutes, flipping halfway through, until tender and caramelized.
  4. Pat shrimp dry and season lightly with salt and pepper.
  5. Heat 1 tablespoon olive oil and 4 tablespoons butter in a large skillet over medium heat. Add minced garlic and sautΓ© 1-2 minutes until fragrant.
  6. Add shrimp in a single layer and cook 2 minutes per side until pink and opaque.
  7. Squeeze lemon juice over shrimp, add red pepper flakes if using, and stir to deglaze pan.
  8. Add roasted carrots to skillet and toss to coat with sauce.
  9. Spoon cooked rice or pasta into bowls (about 1 cup per serving). Top with shrimp and carrot mixture.
  10. Garnish with chopped parsley and optional Parmesan cheese. Serve immediately.

Notes

Do not overcook shrimp to avoid rubbery texture. Roast carrots at high heat for caramelization. Cook shrimp in batches if pan is crowded.
