  • 1/2 cup old-fashioned rolled oats (finely ground)
  • 2 tablespoons honey or maple syrup
  • 1/4 cup mini chocolate chips (optional)
  • 2 tablespoons ground flaxseed
  • 1 teaspoon vanilla extract
  • Pinch of sea salt

Instructions

  1. Place the rolled oats into a food processor or blender and pulse until they resemble a fine flour-like texture (about 1-2 minutes).
  2. In a large bowl, combine peanut butter, honey (or maple syrup), and vanilla extract. Stir vigorously until smooth and well combined.
  3. Stir in the vanilla protein powder, ground oats, ground flaxseed, and sea salt until the dough begins to come together.
  4. Gently fold in the mini chocolate chips.
  5. Scoop out small amounts of dough (about 1 tablespoon or 15 grams each) and roll into tight balls, yielding about 15-18 balls.
  6. Place the balls on a baking sheet or plate lined with parchment paper and refrigerate for at least 30 minutes to firm up.
  7. Enjoy immediately after chilling or store in an airtight container in the fridge for up to one week or freeze for up to 3 months.

Notes
