  • 1 cup (170 g) chocolate chips or chunks (semi-sweet or milk chocolate)
  • 8 ounces (225 g) large marshmallows (or mini marshmallows for even melt)
  • 1 tablespoon (14 g) unsalted butter, softened
  • Broken graham crackers for dipping
  • 1 teaspoon (5 ml) vanilla extract (optional)
  • Optional toppings: sea salt, chopped nuts, crushed peppermint candies, toffee bits

Instructions

  1. Preheat your grill to medium-high heat, around 350°F (175°C). If using charcoal, wait until coals are glowing and covered with white ash (about 10-15 minutes).
  2. Spread 1 tablespoon of softened unsalted butter evenly over the bottom of a cast-iron skillet or heatproof baking dish.
  3. Pour 1 cup of chocolate chips or chunks into the skillet, spreading evenly.
  4. Arrange large marshmallows (about 8 ounces) on top of the chocolate in a single layer, covering the surface completely.
  5. Place the skillet on the grill grates, close the lid, and grill for 5-7 minutes until marshmallows turn golden brown and start to puff. Rotate skillet if needed.
  6. Carefully remove the skillet from the grill using tongs or oven mitts. Let cool for 1-2 minutes to allow chocolate to set slightly but remain gooey.
  7. Serve immediately with broken graham crackers for dipping.

Notes

Watch marshmallows closely to prevent burning. Use fresh marshmallows for best texture. Cast iron skillet recommended for even heat and perfect toasted marshmallow crust. Vanilla extract can be stirred into chocolate before adding marshmallows for extra flavor. For indoor cooking, broil in oven for 3-5 minutes watching carefully. Leftovers store up to 2 days in fridge and reheat gently.
