  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste
  • 1 tablespoon fresh parsley, chopped (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and dry the potatoes. Cut into halves or quarters for even roasting.
  3. Slice the Polish sausage into 1/2-inch thick slices.
  4. In a large mixing bowl, toss the potatoes and sausage with olive oil, garlic powder, smoked paprika, dried oregano, salt, and black pepper until evenly coated.
  5. Arrange the potatoes and sausage in a single layer on a parchment-lined or silicone mat-lined baking sheet, ensuring they are not crowded.
  6. Roast in the oven for 15 minutes.
  7. Use tongs or a spatula to flip the potatoes and sausage pieces for even browning.
  8. Return to the oven and roast for another 15-20 minutes until potatoes are golden and tender and sausage edges are crispy.
  9. Optionally, sprinkle chopped fresh parsley over the top.
  10. Serve hot straight from the pan with your favorite dipping sauces or a simple side salad.

Do not overcrowd the pan to avoid steaming. Toss halfway through roasting for even crispness. Use high heat (425°F) for best results. Let the pan rest a few minutes before serving.
