  • 4 large garlic cloves, minced
  • 1 tablespoon apple cider vinegar or rice vinegar
  • 1/4 teaspoon red pepper flakes (optional)
  • Fresh parsley or green onions, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a rimmed baking sheet with parchment paper or a silicone baking mat.
  2. Pat the chicken thighs dry with paper towels to remove moisture.
  3. In a large mixing bowl, toss the chicken with salt, pepper, and cornstarch until each piece is lightly coated.
  4. Drizzle olive oil over the chicken and toss again to coat evenly.
  5. Arrange the chicken thighs skin side up on the prepared baking sheet, spacing them out to avoid overcrowding.
  6. Bake for 25-30 minutes, flipping the chicken halfway through to skin side down briefly, then back skin side up to finish. The skin should be golden brown and crispy.
  7. While the chicken bakes, prepare the honey garlic sauce by combining honey, soy sauce, minced garlic, vinegar, and red pepper flakes in a small saucepan over medium heat. Stir frequently and simmer for 3-4 minutes until fragrant and slightly thickened.
  8. Once the chicken reaches an internal temperature of 165°F (74°C), remove it from the oven.
  9. Brush the honey garlic sauce generously over each piece of chicken.
  10. Return the chicken to the oven for an additional 5 minutes to set and caramelize the glaze.
  11. Garnish with chopped fresh parsley or green onions before serving.

Pat chicken skin very dry to ensure crispiness. Use cornstarch instead of flour for a lighter, crunchier crust. Avoid overcrowding the pan to prevent steaming. Brush sauce near the end to avoid burning. For extra crispiness, broil 1-2 minutes after glazing, watching carefully.
