A quick and easy no-bake fall dessert featuring creamy pumpkin filling layered with crunchy chocolate cookie crumbs, perfect for parties and cozy family nights.

  • 4 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp pumpkin pie spice (blend of cinnamon, nutmeg, ginger, cloves)
  • 1 tsp vanilla extract
  • 1 cup whipped topping, thawed (use dairy-free if needed)
  • 15 chocolate sandwich cookies (like Oreos), crushed finely
  • Optional garnishes: mini candy pumpkins or candy eyeballs, chopped pecans or walnuts

Instructions

  1. Place 15 chocolate sandwich cookies into a food processor and pulse until finely crushed, resembling soil texture. Alternatively, crush cookies in a sealed plastic bag with a rolling pin. Set aside.
  2. In a medium bowl, beat the softened cream cheese with an electric mixer until smooth and creamy, about 2-3 minutes.
  3. Stir in the pumpkin puree, powdered sugar, pumpkin pie spice, and vanilla extract. Mix on low speed until combined and color is warm orange, about 2 minutes.
  4. Gently fold the whipped topping into the pumpkin mixture with a spatula, keeping it light and airy, about 2 minutes.
  5. Spoon a layer of crushed cookies (about 2 tablespoons) into the bottom of each serving cup. Add a generous layer (about 1/4 cup) of pumpkin cream on top. Repeat layers once more, finishing with a sprinkle of cookie crumbs.
  6. Add optional garnishes such as mini candy pumpkins, candy eyeballs, or chopped nuts.
  7. Refrigerate for at least 1 hour before serving to allow flavors to meld and cream to firm up.
