  • 8 oz cream cheese, softened
  • 1 cup small-curd cottage cheese
  • 1/2 cup mayonnaise (full-fat recommended or Greek yogurt as substitute)
  • 1 tsp Italian seasoning blend
  • 2 cloves fresh garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup chopped pepperoni slices
  • 1/2 cup diced salami
  • 1/4 cup finely chopped capicola or ham (optional)
  • 1 cup shredded provolone cheese, divided
  • 1 cup shredded mozzarella cheese, divided
  • 1/2 cup chopped roasted red peppers
  • 2 green onions, thinly sliced
  • 1/4 cup sliced black olives (optional)

Instructions

  1. Preheat your oven to 350Β°F (175Β°C).
  2. Soften the cream cheese by leaving it at room temperature or microwaving for 15-20 seconds.
  3. In a mixing bowl, combine the softened cream cheese, cottage cheese, and mayonnaise. Use an electric mixer on medium speed for 2-3 minutes until smooth and creamy.
  4. Add minced garlic, Italian seasoning, and grated Parmesan cheese. Mix again for 30 seconds to evenly distribute the flavors.
  5. Fold in the chopped pepperoni, salami, capicola (if using), and roasted red peppers using a spatula to keep chunks intact.
  6. Stir in half of the shredded provolone and mozzarella cheeses.
  7. Transfer the mixture to an 8×8 inch oven-safe baking dish and spread evenly.
  8. Sprinkle the remaining provolone and mozzarella on top for a golden, bubbly finish.
  9. Bake in the preheated oven for 20-25 minutes until bubbly and lightly browned. Tent with foil if cheese browns too fast.
  10. Remove from oven and let cool for 5 minutes to set.
  11. Garnish with sliced green onions and black olives if desired.
  12. Serve warm with crusty bread, crackers, or fresh veggies.

Notes

Use room temperature cream cheese for smooth texture. If dip is too thick before baking, add a splash of milk or cream. Watch oven carefully to avoid burnt cheese. Can be made ahead and baked before serving. Leftovers store well refrigerated or frozen.
