  • 1 teaspoon pure vanilla extract
  • 1 teaspoon ground cinnamon
  • 2 tablespoons powdered sugar (for filling and dusting)
  • 1 teaspoon lemon zest (optional)
  • 2 tablespoons unsalted butter, for cooking
  • Maple syrup or honey, for serving

Instructions

  1. Prepare the cream cheese filling: In a medium bowl, combine softened cream cheese, powdered sugar, and lemon zest. Mix until smooth and creamy. Set aside.
  2. Slice the bread: Cut thick slices of brioche and carefully slice a horizontal pocket into each slice without cutting all the way through.
  3. Fill the bread: Spread about 2 tablespoons of the cream cheese mixture into each bread pocket, then stuff with sliced fresh strawberries. Gently press the bread closed.
  4. Make the custard: In a large shallow bowl, whisk together eggs, whole milk, vanilla extract, and ground cinnamon until fully combined.
  5. Dip the stuffed bread: Dip each stuffed slice into the custard, soaking about 20 seconds per side. Avoid soaking too long to prevent sogginess.
  6. Cook the French toast: Heat butter in a large skillet over medium heat. Cook the stuffed slices for 3-4 minutes per side until golden brown and cooked through. Flip gently to avoid filling spilling out.
  7. Serve warm: Transfer to plates, dust with powdered sugar if desired, and drizzle with maple syrup. Garnish with fresh strawberry slices.

Notes

Use day-old bread for better soaking. Cook on medium heat to avoid burning outside before filling heats through. Press edges gently after filling to prevent leakage. Frozen strawberries can be used if thawed and drained well.
