These party-ready bites feature golden puff pastry topped with fluffy whipped ricotta, crispy bacon, and a drizzle of honey. They’re easy to make, crowd-pleasing, and perfect for entertaining or holiday gatherings.

  • 2 sheets puff pastry (store-bought, such as Pepperidge Farm)
  • 1 large egg, beaten
  • 1 1/2 cups whole milk ricotta cheese
  • 2 tablespoons honey, plus extra for drizzling
  • Pinch of salt
  • 1 teaspoon fresh lemon zest (optional)
  • 4 slices thick-cut bacon
  • Cracked black pepper, to taste
  • Fresh thyme or chives, for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Unfold puff pastry sheets and let sit at room temperature for 10 minutes.
  2. Slice each sheet into 2-inch squares using a sharp knife or pizza cutter. Place on a parchment-lined baking sheet, spaced 1 inch apart.
  3. Brush each pastry square lightly with beaten egg.
  4. Bake in the center of the oven for 15-18 minutes, until puffed and golden brown. Transfer to a wire rack to cool.
  5. While pastry bakes, cook bacon in a skillet over medium heat until crispy (6-8 minutes). Transfer to a paper towel-lined plate, cool, and chop into small bits. Sprinkle with cracked black pepper.
  6. In a mixing bowl or food processor, combine ricotta, honey, salt, and lemon zest (if using). Whip on high speed for 2-3 minutes until light and fluffy. Chill if needed.
  7. Once pastry is cool, dollop about 1 tablespoon whipped ricotta onto each square. Top with bacon crumbles and drizzle with extra honey if desired.
  8. Garnish with fresh thyme or chives.
  9. Arrange on a platter and serve immediately. For make-ahead, keep pastry and toppings separate until serving.

Notes

For best results, use cold puff pastry and whole milk ricotta. Chill pastry if it gets too soft while handling. Assemble just before serving to keep pastry crisp. Substitute turkey bacon or mushrooms for a vegetarian version, and use gluten-free or dairy-free alternatives as needed.
