Instructions

  1. Preheat your oven’s broiler to high and position the rack about 6 inches from the heat source.
  2. Split the English muffins in half and butter each side lightly. Toast until golden and crisp, about 3-4 minutes per side in a skillet or 5 minutes in a toaster oven.
  3. In a medium bowl, combine drained tuna, mayonnaise, Dijon mustard, chopped celery, minced red onion, lemon juice, salt, and pepper. Mix until just combined.
  4. Spoon about 1/4 cup of the tuna salad onto each toasted English muffin half, spreading evenly but gently.
  5. Sprinkle shredded sharp cheddar cheese on top of each tuna pile.
