Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse the asparagus spears under cold water and pat dry with a kitchen towel. Trim about 1 to 1½ inches off the woody ends by gently bending each spear until it snaps naturally.
  3. Place the asparagus spears on a baking sheet and drizzle with olive oil. Use tongs or your hands to coat evenly, making sure every spear gets a light layer of oil. Sprinkle sea salt and black pepper over the top.
  4. Arrange the asparagus in a single layer on the baking sheet, avoiding overlap to ensure even roasting and crispiness.
  5. Roast in the preheated oven for 12-15 minutes. Halfway through, shake the pan or flip the spears to ensure even browning. The asparagus should be tender but still snap when bent, with crispy, slightly charred tips.
  6. Remove from the oven and immediately zest a fresh lemon over the spears to infuse bright flavor.
  7. Sprinkle the freshly grated Parmesan cheese evenly over the hot asparagus. The residual heat will slightly melt the cheese, creating a savory coating.
  8. Give a final gentle toss to distribute flavors, then serve immediately. Optionally, add a quick grind of black pepper or a pinch of chili flakes for extra zing.

Dry asparagus well before roasting to avoid steaming and sogginess. Avoid overcrowding the pan to ensure crisp edges. Use fresh lemon zest, not juice, for best flavor.
