  • 2/3 cup (135g) granulated sugar
  • 2 large egg whites, room temperature
  • 4 tablespoons (60g) unsalted butter, melted and slightly cooled
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract (optional)
  • 1/4 teaspoon salt
  • 1 cup (175g) dark or milk chocolate chips
  • Fortunes printed or handwritten on thin paper slips

Instructions

  1. Preheat your oven to 350Β°F (175Β°C). Line a baking sheet with parchment paper or a silicone mat to prevent sticking.
  2. In a medium bowl, whisk together all-purpose flour, granulated sugar, and salt. Set aside.
  3. In a separate large bowl, whisk egg whites until frothy but not stiff.
  4. Slowly whisk in melted, cooled unsalted butter, vanilla extract, and almond extract (if using). Mix until combined.
  5. Gradually add the dry mixture into the wet, whisking gently until smooth and lump-free. The batter should be thin enough to spread easily.
  6. Using a small offset spatula, spread about 1 tablespoon of batter into a thin 3-4 inch circle on the prepared baking sheet. Bake only 2-3 cookies at a time.
  7. Bake for 7-8 minutes, or until edges are golden brown and center is set but still pliable.
  8. Quickly remove cookie from oven. Place a fortune paper slip in the center, fold cookie in half over the fortune, then bend the folded edge over the rim of a cup or bowl to shape the classic fortune cookie. Work fast as cookies crisp quickly.
  9. Place shaped cookies on a cooling rack to set and crisp fully. Repeat with remaining batter.
  10. Melt chocolate chips in a microwave-safe bowl in 20-second bursts, stirring between each, or use a double boiler.
  11. Once cookies are cool, dip one end into melted chocolate and set back on the rack. Let chocolate harden at room temperature or in the fridge.

Notes

Work quickly when shaping cookies as they harden fast. If cookies harden before shaping, warm them in the oven for 20-30 seconds to soften. Spread batter thinly and evenly for perfect crispness. Store cookies in an airtight container to maintain crispness. For dairy-free or gluten-free versions, substitute ingredients accordingly.
