A quick and easy appetizer featuring fluffy whipped feta cheese spread on toasted crostini, topped with sweet roasted strawberries and a balsamic drizzle for a perfect balance of creamy, sweet, and tangy flavors.

  • 4 ounces cream cheese, softened
  • 2 tablespoons heavy cream
  • 1 tablespoon freshly squeezed lemon juice
  • 12 ounces fresh strawberries, hulled and halved
  • 1 tablespoon granulated sugar
  • 2 tablespoons balsamic vinegar
  • 1 small baguette, sliced about 1/2 inch thick
  • 2 tablespoons olive oil
  • Fresh black pepper, to taste
  • Fresh basil or mint leaves (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a medium bowl, toss the hulled and halved strawberries with granulated sugar until evenly coated. Spread them out on a parchment-lined baking sheet in a single layer.
  3. Roast the strawberries in the oven for 15 to 18 minutes, or until soft, slightly caramelized, and juicy.
  4. While the strawberries roast, slice the baguette into 1/2-inch slices. Brush each side lightly with olive oil. Arrange on a separate baking sheet and toast in the oven for about 7 minutes, flipping halfway, until golden and crisp.
  5. In a food processor, combine crumbled feta, softened cream cheese, heavy cream, and lemon juice. Blend until smooth and airy, about 1 to 2 minutes, scraping down the sides as needed.
  6. Spread a generous layer of whipped feta on each toasted bread slice. Top with 2 to 3 roasted strawberry halves.
  7. Drizzle each crostini with about 1 teaspoon balsamic vinegar and finish with a few cracks of fresh black pepper.
  8. Optionally, garnish with fresh basil or mint leaves.
  9. Serve immediately while crostini are crisp and whipped feta is cool and creamy.

Notes

Use day-old or slightly stale baguette for best toasting results. If whipped feta is too thick, add a splash more heavy cream and blend again. Spoon off excess juice from roasted strawberries to avoid soggy bread. For vegan or dairy-free options, substitute cream cheese and feta with plant-based alternatives and heavy cream with coconut cream. Crostini are best served immediately; assembled crostini do not store well as bread softens.
