  • 1 cup fresh strawberries, hulled and halved
  • ½ cup unsweetened shredded coconut, toasted
  • ¼ cup almond milk (60 ml)
  • 12 tablespoons maple syrup (optional)
  • 1 teaspoon vanilla extract
  • 1 tablespoon chia seeds (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Spread shredded coconut evenly on a baking sheet and toast for 5-7 minutes, stirring halfway through, until golden brown and fragrant. Set aside to cool.
  2. Slice frozen bananas into chunks. If not frozen, peel and slice bananas, then freeze for at least 2 hours or overnight.
  3. Add frozen banana chunks, almond milk, maple syrup (if using), and vanilla extract to a high-speed blender or food processor. Pulse first, then blend on high until smooth and creamy, about 2-3 minutes. Add more almond milk 1 tablespoon at a time if needed to blend smoothly.
  4. Hull and halve the strawberries. Optionally toss with a teaspoon of maple syrup or a squeeze of lemon juice for extra flavor.
  5. Spoon the creamy nice cream into serving bowls. Top with fresh strawberries, toasted coconut, and chia seeds if using. Add extra sliced strawberries or a drizzle of maple syrup if desired.
  6. Serve immediately for best texture. Store leftovers in an airtight container in the freezer for up to 3 days. Thaw slightly before serving and stir gently.
