A quick and easy creamy frozen dessert made with frozen bananas and strawberries, blended to a soft-serve texture with coconut milk and vanilla. Perfect for a refreshing summer treat that’s healthy and delicious.

Ingredients

  • 2 medium frozen bananas, peeled and sliced
  • 1 cup frozen strawberries, hulled
  • 1/4 cup full-fat coconut milk
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon maple syrup (optional)
  • 1 teaspoon fresh lemon juice
  • Pinch of sea salt
  • Optional toppings: chopped nuts, shredded coconut, fresh strawberry slices, dark chocolate drizzle

Instructions

  1. Peel and slice bananas before freezing for at least 4 hours or overnight. Hull and freeze strawberries if not using pre-frozen.
  2. Add frozen banana slices to a high-speed blender or food processor. Pulse a few times, then blend continuously for 1-2 minutes until soft-serve consistency is reached. Scrape down the sides as needed.
  3. Add frozen strawberries, coconut milk, vanilla extract, maple syrup (if using), lemon juice, and sea salt. Blend for another 1-2 minutes until well combined and creamy.
  4. Taste and adjust sweetness by adding more maple syrup if desired. If too thick, add a splash more coconut milk and blend briefly.
  5. Spoon the nice cream into bowls and serve immediately for a soft texture, or freeze for 30 minutes to 1 hour for a firmer scoop.

Notes

Use ripe bananas for natural sweetness and creaminess. Freeze fruit fully for best texture. If blender is low-powered, pulse and scrape often. Adjust sweetness to taste. Optional toppings add texture and flavor. Store leftovers in an airtight container in the freezer for up to 1 week; thaw 5-10 minutes before serving.
