Instructions

  1. Place 4 large eggs in a small pot and cover with cold water by about an inch. Bring to a gentle boil over medium heat, then reduce heat to maintain a simmer. Cook for exactly 6 minutes for perfect soft-boiled eggs.
  2. Remove eggs with a slotted spoon and transfer to an ice bath for 5 minutes to stop cooking. Peel carefully and set aside.
  3. In a medium skillet over medium heat, add a splash of olive oil. Toss in minced garlic and cook until fragrant, about 30 seconds.
  4. Add fresh spinach and chopped artichokes. Stir until spinach wilts and moisture mostly evaporates, about 4-5 minutes. Remove from heat and let cool slightly.
  5. In a mixing bowl, combine softened cream cheese, sour cream, and mayonnaise. Whisk until smooth and creamy.
  6. Stir in grated Parmesan cheese, lemon juice, salt, and pepper. Add a pinch of red pepper flakes if desired.
